Perfect for Fried Eggs!!
As a child cast iron pans were the norm in our household and as an adult I switched over to stainless steel because they clean easier. Many years ago I briefly tried nonstick (Teflon) until we heard it was toxic and recently I tried the latest nonstick pans that claim to be “safe” which I later discovered isn’t entirely true...time will tell. Which brings me to this, my current pan. It is by far my favorite egg pan, cooking evenly and with the ceramic coating and an equal mix of good oil and butter it is just as nonstick as the so called “safe pans”. On my way to making a set of these. You won’t be disappointed.Cleanup is just as easy as nonstick when your working with a hot pan, some butter and good oil.Update 6/10/23: This is a beautiful well made pan but it’s no where’s as nonstick as it was when the above review was written. It’s necessary to soak because most foods stick to it. The finish has not changed to the eye, nothing appears to be coming off but as I said food sticks to it. It’s much healthier than the conventional “nonstick pans” with coatings made of toxins that all eventually come off into our food. For this reason I continue to use it often and the extra elbow grease is a easy trade off to carcinogens. I would purchase again but feel necessary to change my review from 5* to 4*.

Not "flat"
If you want to make eggs or other somewhat runny foods then this isn't for that...The griddle side has a bit of a bow to the middle - a high point in the middle if you will - fried eggs just roll off into the catch on the side.Perhaps it was just mine but it certainly isn't flat... Disappointed in that.Heat distribution is good directly above the elements and the grill makes great grill lines.When you get it I suggest cleaning it with dish soap to remove the manufacturing junk, dry it well and season with oil, toss it in the oven @400-450 and be ready for the smoke.... After 15 minutes @ heat turn the oven off and let it cool.Take it out, wipe it down and use a little oil every use - good to go.I'd probably go with the Lodge if I didn't have a Viking oven - I went for the name.

Temp is only up to 400 degree on the paperwork I received.
I was surprised the griddle only handle up to 400 degrees. I purchased to sear my steaks. The other Viking cast iron are rated up to 500 degrees. I didn't see anything in the description as I was purchasing stating that the griddle was rated to only 400 degrees.I haven't used yet but I know of the Viking quality and believe it is of high quality. It is heavy which I am assuming there will be even heat.

Nothing like cast iron cooking
Love cooking on cast iron. Two issues were my other cast iron cooking surface was smooth. This is lightly rough so material catches on surface when wiping/cleaning. Bought for my Viking stove but it doesn’t fit evenly on it. Should have bought the Viking grill at the appliance store when I bought my stove- it fit perfectly snug. So maybe this is generic Viking for all stoves. Probably both are reasons it was makes down so much. Still happy to finally have a cast iron grill again.

Love at first use!
Love at first use! It arrived yesterday and we felt like pancakes so heated it, oiled it a bit and voila... 2 delicious perfectly cooked pancakes. I was nervous there’d be sticking. It was minimal and super easy to clean.We also have a Lodge griddle and use them both on a 36” Viking gas stove.. love both griddles but slightly prefer the Viking since it was truly pre-seasoned out the box. Also the Lodge had a sticky instruction label on the smooth side that was tough to peel off.

Great Alternative to Cast iron skillet or griddle pan...
I purchased a Viking professional gas range and wanted a griddle for the top. The Viking griddle pan is easy to use, clean and store. It is solid unseasoned cast iron, so it is a bit heavy, and requires you to season it with vegtable oil, (I used canola oil). It makes it virtually non stick, without cooking spray.I would recommend this product. It cooks evenly and puts a nice bark on most meats.

This works perfect on a Viking range
I was concerned about the fit across two burners. I was concerned about enough length. This turned out to be perfect. Even heat distribution. Versatile. We use it a lot to make home tortillas as well as the other usual items. I highly recommend this product. Can't go wrong.

Size
It didn't fit my Viking stove. It wasn't long enough and the handles got to heated to hold on to.

Don’t like it
This is a terrible pan to work with. After our first use, it looked as though the enamels had either discoloured or residue had seeped below the enamel coating. I wished I’d save the $127 and put this money towards a Dutch oven or similar instead.

After first washing, it showed rust spots.
